Thanks to the French, we have some wonderful things to eat and restaurants to eat them in. Over 200 years ago a Parisian soup vendor named Boulanger opened a dining room offering a choice of dishes. His sign over the door said Restaurants (restoratives). Before that time inns and taverns served one set meal to all diners.

The French take eating and cooking as a serious venture, necessary to maintain and to enjoy life. Great chefs created “haute cuisine” (high cooking) in exclusive restaurants and hotels. French cuisine became known for rich sauces, complicated recipes, and elaborate pastries and desserts. French restaurants set modern standards for food preparation, presentation, and service.

Modern chefs favor simpler, fresher, and lighter cuisine. Restaurants highlight regional food based on peasant dishes and local ingredients. Next time you are in a restaurant, café, or bistro, remember it all started in France.

O is for Omelette

Beat fresh eggs smooth and light.

Pour in the pan and stir just right.

Add cheese and chives, roll then set.

You’ve got a perfect omelette.
